Strawberry Cream Gateau [Picture] [Print]
Two airy light layers of cake with a hint of rum surrounding a creamy creme with pieces of strawberry. Whole strawberries on a bed of cream, garnished with pistachios, crown the creation.
Ingredients Preparation

Cake layers:

300 g wheat flour
150 g cane sugar
1 sachet baking soda
1 tsp. baking powder
2 tsp. cider vinegar
10 tbsp. oil
1 cup water/half a pack soy whip
1 sachet vanilla sugar
1/2 phial butter & Vanilla essence
2 caps rum


Strawberry creme:

about 20 strawberries (finely chopped)
1 tbsp. lemon juice
2 sachet vanilla sugar
2 packs soy whip
2 sachets Agartine (agar agar)


Decoration:

half a pack whipped soy whip
about 25 whole strawberries
chopped pistachios
Mix all the cake ingredients to make a creamy dough. (if necessary add water). Pour the dough into a greased springform pan and bake for 30 min on the middle rack at 150°; C.

Use a thread to cut the cake horizontally into two layers. Place one of the layers in cake ring.

Boil 2 sachets Agartine in 300m1 Wasser and simmer for two minutes. Take off the stove and allow to cool whilst stirring constantly. The mixture should still be runny, but only lukewarm, as the soy whip would melt otherwise. Whip 2 packs soy whip with vanilla sugar until stiff. Stir in the lemon juice and strawberry pieces. Fold the agartine into the soy whip.

Pour the creme into the cake ring and refrigerate for 2 hours. Then place the second cake layer on top. Spread with soy whip and decorate as desired with strawberries and pistachios.
