"Zenzi‘s Dream" [Picture] [Print]
Black Forest Gateau with marzipan cow "Zenzi"
Ingredients Preparation

Cake:

250 g wheat or spelt flour
100 g finely grated almonds
3 heaped tbsp. soy flour
4 heaped tbsp. cocoa
10 g soda
1 sachet baking powder
200 g sugar
400 ml soy milk
4 tbsp. oil


Filling:

1 level tsp. agar agar
250 ml cherry juice
500 g cherries
600 ml Soyatoo!
chocolate flakes


Cow »Zenzi«

500g marzipan
food colouring
white and chocolate glaze
modelling tools
large toothpicks ;o)
DIN A4 sheet of paper
PC, graphics program
printer,
glue stick
cherries

Cake:

Mix the flour, almonds, soyflour, cocoa, soda, baking powder and sugar. Then add soy milk and oil to make a smooth, somewhat runny dough. Pour the dough into a well greased springform pan (28 cm).

Bake: second rack with bottom heat at 175°;C for about 40 - 50 minutes


Filling:

Mix the agar agar and cherry juice, then add the cherries. Bring to the boil and simmer for 1-2 minutens. Leave to cool.


Cow »Zenzi«

Put a large piece of marzipan on a marzipan platform (20 cm) and sculpt with modelling tools until you have a cow. Paint as wished with food colouring and glaze. Layout and print a demonstration sign with your computer. glue it onto a wooden skewer and stick it in the marzipan sculpture.


»Construction«

Cut the sponge base horizontally into three equal pieces. Whip the Soyatoo until stiff. First spread the cooled cherry mixture, then about 1/3 of the cream on the first cake layer. Place the next layer on top of that and spread with a quarter of the remaining cream. Cover with the last layer and coat the entire cake with three quarters of the cream now left over. Then strew the cake with chocolate flakes and last of all ceremoniously place the cow »Zenzi« on top. Use a piping bag and the last of the cream to conjure a bed of cream, and decorate with cherries.
