Soyatoo! Cherry Dream [Picture] [Print]
fruity dairy-free, egg-free and wheat-free cake
Ingredients Preparation
300g light spelt flour
5 tsp. baking powder
200g sugr
1 tsp. cinnamon
100g dairy-free margarine
200ml water
1 cup dark chocolate glaze
1 jar morello cherries
4 tbsp. potato starch
a little water
300ml Soyatoo! cream
2 sachets cream stiffener
dark chocolate glaze for decoration
Mix the flour, baking powder, cinnamon and sugar; add the margarine in flakes; add the water by the spoonful, until you have a creamy dough. Fill a greased springform pan and bake at 200°;C for about 30 minutes. Let the cake base cool. Spread the cooled base with heated chocolate glaze (put some aside for decorating). In the meantime drain the cherries well. Mix the starch with a little water, then stir into the heated cherry juice, until you have a stiff mixture. Stir in the cherries and put aside to cool. Spread the cooled cherry mixture on the cake base and refrigerate for at least 2 hours. Whip the Soyatoo! cream with two sachets cream stiffener until stiff and spread on the cake. Heat the remaining chocolate glaze and scatter over the top.
